White Asparagus

White asparagus is characterised by its texture and white colour, the result of growing underground. As it does not receive any light, it does not synthesise any chlorophyll.  The sandy soil in which it grows makes it tender and juicy.

At present we only have white asparagus, but the new projections for the 2025 season are to plant 12 hectares of green asparagus.

Our asparagus is the result of biodynamic farming in sandy soil. This unique combination gives it a sweet flavour and crunchy texture, ideal to be eaten both raw and cooked. It is a product with very little woody fibre and is therefore tender and tasty.

These stalks offer us a large number of benefits for our body, from their low caloric value, with only 20 kilocalories per 100 grams, to the amount of minerals they contain such as potassium, phosphorus and vitamins A, B and C. They are also rich in protein and have high water content, offering great diuretic and satiating properties.
