Red Kuri Squash

The red kuri squash, also known as the Hokkaido pumpkin, is one of the so-called winter squashes, small in size, with a thin rind, a reddish colour and harder flesh. It is the antioxidant food par excellence thanks to its richness in carotenes, which are vitamin A precursors. It contains 90% water and very few carbohydrates or calories.
